JOTIS Ravani Mix
If there is one distinguishing feature of most Greek desserts, it is the long and wonderful culinary tradition of creating syrupy confections. Ravani is a classic Greek semolina sponge cake, drenched in a luxurious lemon-scented sugar syrup once cooled. This sumptuous dessert has been popular in Greece (and in Turkey as “Revani” and in much of the Middle East where it is known as “Basbousa”) since the Ottoman Era. The secret to the goodness of JOTIS Ravani Mix is the quality of the wheat semolina and the balance of lemon and vanilla flavoring in our sugar syrup. All you need to add to our Ravani Mix is butter or margarine, milk, eggs and sugar. Only 5 minutes of prep-timeis needed before the 60-minute bake. Then, cool the cake before cutting it into diamond shapes and coating each piece with sugar syrup. This light and delicious cake is wonderful on its own, and even better with ice cream! In Greece, Ravani is typically enjoyed with creamy Kaimaki ice cream, flavored with mastiha, a natural resin of the Mastic Tree.
