STELLA #2 Pasta
If you have family or friends in Greece, chances are you’ve had the distinct pleasure of eating Pastitso (“Pastitsio” or “Pastichio”), a quintessentially Greek casserole made with #2 Pasta, instead of flat lasagna noodles. Thicker than bucatini, #2 Pasta are long noodles with a hole running through them. Each family has its own rendition of Pastitso, often called “Greek Lasagna.” The core components include: a bottom layer of #2 Pasta bound together with egg and cheese, a middle layer of “Greek” Bolognese, often seasoned with cinnamon, nutmeg and/or allspice – and a generous top layer of béchamel and grated cheese. This heart and soul warming dish also lends itself beautifully to vegetarian preparations. While Stella #2 Pasta is the “go to” noodle for Pastitso, these delicious noodles marry beautifully with red and cream-based sauces. If you love seafood, serve Stella #2 Pasta with an olive oil, garlic and white wine sauce, laden with shrimp, seared scallops, octopus or calamari. For a sumptuous vegetarian dish, serve the noodles with roasted cauliflower, wilted spinach and top with seasoned breadcrumbs.
