This cheese is pale golden yellow with small holes and a hard rind. As indicated by its name, it is similar to both graviera and kefalotryi, but with a more pungent, salty taste. It is tasty with bread and jam and exceptional when grilled and is often served along with fresh fruit. Kefalograviera also lends itself to grating, therefore is superb over fried potatoes, pasta, soups and stews.
