Feta

Cited in accounts from antiquity and unquestionably one of the best-known cheeses in the world, feta is a soft white brine cheese made from all three types of milk. Most feta is produced in barrels and tins. No matter the milk source or production method, feta features a pleasingly salty taste. Some are more mellow and creamy, while others are drier and sharper. It is a staple ingredient in salads, appetizers and entrees. Sheep milk fetas tend to be sharpest, goat and cow milk, milder. Organic, block, creamy or crumbly, there are literally dozens of choices.
