Packed in salt (which removes moisture and shrinks the flesh), oil-cured olives impart a chewy, savory punch to salads, breads and stews. Ours are offered both plain and herb-seasoned. On the other side of the spectrum, Alfonso olives are quite large in size with a deep purple color and smooth, macerated meat. Carrying a hint of bitterness, these juicy olives are best enjoyed simply on their own or as a contrasting flavor for meat, cheese and fruit boards.
