Another food that quickly evokes a strong sense of place are fillo desserts. Classic nut-filled pastries soaked in syrup take many forms in the Mediterranean and Middle East. These regional dessert essentials are dominated by various forms of baklava, made from crisp, flaky layers of fillo, a moist nutty filling and a syrupy bottom crust of rose water or orange blossom, among other flavors.
