“Kofto” is the Greek word for Italian “Tubetti”: small hollow tubes of pasta. In Greece, Kofto are often used in “Youvetsi” (or “Giouvetsi”): a traditional casserole made with ground lamb or beef, baked in a light tomato sauce seasoned with garlic and cinnamon and topped with cheese.
