Bulgur is a wonderfully versatile and nutritious culinary ingredient that has been a pantry staple in Middle Eastern and Mediterranean households for thousands of years. This “ancient grain” is made with whole wheat that is cleaned, parboiled, dried, ground into particles, and sifted into distinct sizes. Our Half Cut Traditional Bulgur has an extra-large grind, making it an ideal component for soups, pilafs, side dishes and specialty recipes that call for the textural heartiness of #5 bulgur. Because bulgur is always parboiled, it cooks faster than rice. To amplify the inherent nutty flavor profile of our half cut bulgur, toast the grains in butter for 5 minutes before adding your cooking liquid. For a traditional bulgur pilaf, sauté orzo or broken vermicelli noodles along with the butter and bulgur mixture. Bulgur wheat is a rich source of fiber, protein and naturally occurring vitamins and minerals, including B vitamins, iron, phosphorus and manganese. Because bulgur has a lower glycemic index than pasta or rice, it is perfect for diabetics. A great grain for vegan, vegetarians and omnivores, Bulgur is not recommended for anyone with Celiac Disease or with a gluten intolerance.
