Our Whole Wheat Berries are triple-cleaned whole white wheat kernels with the bran, germ and endosperm intact. With a sweet nutty taste and wonderful chewy texture, these nutritious grains have manifest culinary applications! To prepare: soak 1/2 cup of wheat berries in 2 1/2 cups hot water for 1 hour, heat to boiling then reduce heat and let sit for 45 minutes until wheat is softened to the bite. For a fortifying breakfast or brunch offering, add the cooked wheat berries to cooked oatmeal and serve with dried or fresh fruit, maple syrup or brown sugar! Or simply top the whole wheat berries with fresh fruit, Greek yogurt and honey. Use Sunnyland Mills Whole Wheat Berries as you would farro, barley or rice: in soups, stews, hot side dishes or one-pot vegetarian or meat-based meals. Whole wheat berries are a delicious grain for muffins and artisanal breads. Where wheat berries really shine is in cold or warm salads! Combine our cooked wheat berries with dried cranberries or cherries, diced tart apples and walnuts or pecans, spring onion, celery, olive oil and lemon juice, or balsamic vinegar, for a refreshing and delicious appetizer or side dish! Use to add flavor and textural variety to a Middle Eastern inspired chopped salad, with chopped onions, cucumber, tomato and mint or parsley – topped with feta, with fresh lemon and olive oil.
