Halloumi

Name a country in the Mediterranean or Middle East, and it is sure to have its own version of halloumi. Originally from the island of Cyprus, halloumi is a semi-hard, unripened, brined cheese made from goat and sheep milk (though occasionally cow milk). It handles frying and grilling very well.
